birds' nests

Think of a latka meets a spanish omelet, but healthier, and damn delicious. None of that fried shit. Just real food, real ingredients, real tasty.


¾ cup of Spero Scramblit

2 medium sized potatoes

1 large carrot

2 zucchini

1 garlic clove

½ onion




Thinly slice potatoes, carrot, zucchini, onion, and garlic into slivers. A food processor works well for this.

In a mixing bowl, add sliced veggies, Spero Scramblit, and a dash of salt and pepper. Blend ingredients well with a mixing spoon.

Preheat oven to 400F.

Using a large spoon, distribute mixtures in circular shapes (Bird's Nests!) on baking sheet. One Bird’s Nest should be about ¼ of a cup in size.

Bake for approximately 10-15 minutes. They're done once firmed. For a crunchier experience, flip Bird’s Nest at 10 minutes to let both sides crisp. Then, bake for another ~5 minutes.
